“You plant  and weed dandelion?” people often ask. Yes we do because it’s easier to dig up a row rather than roaming around the garden trying to harvest 60 kg of root. 

Dandelion Root has a long history of medicinal uses, and is recognized as a nutritious food plant.  Dandelion root has a flavour similar to the leaf;  earthy and nutty with a hint of bitterness. It can be made into a tea or roasted it can be used as a coffee substitute. Fresh it can be used as a side dish so if you soaked our dried dandelion root you could add it to soups and stews for additional nutrition and flavour. We harvest the dandelion root in the fall, when they have stored the maximum concentration of nutrients.
